The MBB team were recently in the kitchen with Chef Amber baking up some truly magnificent desserts. Inspired by our pure indulgence range, we’ve put together four easy to make treats for you to try yourself and loved ones this spring. From gatherings at home to kids parties, these delicious recipes are guaranteed to hit the sweet spot every time.

Carrot Cake Cupcakes with White Hot Chocolate Frosting:
Prep Time: 20 mins
Baking Time: 25 mins
Makes 12 cupcakes
Ingredients:
160g all-purpose flour
1 tsp baking soda
¼ tsp fine sea salt
¾ teaspoon ground cinnamon
¼ tsp ground ginger
¼ tsp ground cardamom
⅛ teaspoon of freshly grated nutmeg
½ cup vegetable oil
½ cup of sugar
½ cup lightly packed brown sugar
1 tsp vanilla essence
2 large eggs
1 ½ cups of grated, peeled carrots
¼ cup chopped pecan nuts
¼ cup raisins
White Hot Chocolate Buttercream:
250g unsalted butter (softened)
250g icing sugar
200g White Hot Chocolate
A splash of milk
Method:
Heat the over to 180 degrees and grease proof your muffin tray
In a medium bowl, whisk your flour, baking soda, salt and spices until well blended
In another bowl, whisk oil, sugars and vanilla essence followed by one egg at a time until combined
Add your dry ingredients to the wet mixture in three parts, gently stirring with a fast payout online casino spatula until the batter is silky smooth. Stir in carrots, nuts and raisins
Divide the batter into your muffin cups and bake for 20 to 25 minutes until the centre comes out clean
Cool for 5 minutes and transfer onto a cooling rack
For the frosting:
In a saucepan, combine 200g of white hot chocolate with a little bit of water and whisk on a low heat. The consistency should be thick and silky smooth
Remove white hot chocolate mixture and allow to cool
Beat the butter on a low speed until soft, adding the icing sugar 1 tablespoon at a time until combined
Pour the cooled white hot chocolate mixture into the icing mixture and beat on a low speed until soft and spreadable. Add a splash of milk if required
The finishing touch:
Frost the cooled cupcakes with a piping bag and top with coarsely chopped pecans
Chai Spice Shortbread Cookies:
Prep Time: 20 mins
Baking Time: 25 mins
Makes 48 cookies
Ingredients:
2 TBSP of loose-leaf tea
6 tsp of Spicy Chai Latte
A pinch of salt and black pepper
1 cup butter
½ cup white sugar
1 tsp of vanilla essence
2 cups of al-purpose flour
Method:
Pre-heat your oven at 180 degrees
Grind the tea into a fine powder and combine with the Spicy Chai Latter powder, salt and pepper
Beat the butter, sugar and vanilla in a bowl with an electric mixer until creamy
Add the spice mixture and mix thoroughly
Fold in flour, ½ a cup at a time until a stiff dough forms
Place the dough on a lightly floured surface and roll out to ¼ inch thickness. Cut into 2 inch pieces with a cookie cutter or knife
Place on baking sheet and bake until edges begin to brown for about 20 mins
Enjoy these magnificent desserts with a delicious cup of coffee or tea!
Traditional Affogato
Prep Time: 5 mins
Baking Time: 0 mins
Makes one serving
Ingredients:
Two scoops of good quality vanilla bean ice cream
Two shots of freshly brewed, dark horse coffee
Method:
Scoop two servings of ice cream into a tumbler (add some toppings of your choice)
Pour over 2 shots of freshly percolated dark horse espresso shots or strong brewed coffee
Chocolate Comfort Cake:
Prep Time: 15 mins
Baking Time: 50 mins
Makes 12 servings
Ingredients:
1 pack of dark chocolate cake mix
1 package of instant pudding mix
4 large eggs
1 cup sour cream
¾ cup sunflower oil
¾ cup of Dark Horse or Original brewed coffee
6 TBSP of unsalted butter
150g of Dark Hot Chocolate
Method:
Pre-heat the oven at 180 degrees
In a large bowl, combine the cake and pudding mix, eggs, sour cream, oil and coffee and beat on a low speed for 30 seconds. Beat for a further 2 minutes on medium speed
Pour the cake mixture into a cake tin and bake for about 50 to 55 minutes or until clean. Cool for 10 minutes before placing on a cooling rack
While the cake is baking, add 150g and butter to a saucepan and stir with a wire whisk until the mixture is glossy and smooth. Add a little bit of water if too thick
Drizzle over the cake
